Bolton's Spicy Chicken & Fish was started by the late Bolton Polk on a family recipe passed down through generations.
His nephew Bolton Matthews and his wife Dollye Ingram took up the torch in the 90s, bringing the family's signature dish to East Nashville and beyond - including a beloved LA pop-up.
Today, the Bolton's brand and name remain a permanent thread in East Nashville history and the broader American culinary tapestry.
